Dry Aged Beef Tenderloin Tails

So here's the deal.  When the guys are breaking short loins for Porterhouses and T-Bones we bone out the last bit for NY Strips and scoop the filet tails.  These have always been put aside for the chairman of the company and his buddies, but I talked my way into a handful.  This is 28 Day Dry Aged Prime Filet.  Quick to cook and flavor for days.  Roughly 20oz per package, with two or three pieces depending on size.  First come, first serve.  (Limit 2 per customer.)
